Veganuary Recipes: Bean and Chickpea Burgers

Reconnect to yourself through healthy eating this Reconnect Week! We are continuing to share some delicious vegan recipes to give you some ideas for your veganuary meal prep! This recipe makes around 6 burgers and is a super healthy alternative to a fake-meat style patty. It's packed full of beans, chickpeas and flavoursome spices to give you the protein you need this veganuary.












































Ingredients

1 Onion

1 Garlic clove

1/2 pack of button mushrooms

1 can butterbeans

1 can chickpeas

1/2 cup aquafaba (saved from chickpea can)

1 cup chickpea flower

2tsp Chilli flakes (or Cayanne pepper)

2tsp cumin

2tsp turmeric

2tsp coriander

2tsp paprika

burger buns

lettuce

tomato

pickles

condiment of choice


To serve

Your choice of Wedges or side salad.


Method

Heat some oil in a large non-stick frying pan. Add 1 onion finely diced, then fry for 5 minutes until the onions start to go translucent. Add in the 1 clove of garlic and half a pack of finely diced button mushrooms. Once fried place to one side and start on the rest of the mixture.


Preheat the oven to 180 before starting on the burger mixture. Add to a large bowl 1 can on drained butterbeans and 1 can of drained chickpeas (save the chickpea water for later) and start to mash with either a fork or a masher. Continue to mash until most of the beans and chickpeas are a pulp. Add into the mixture 2tsp chilli flakes, 2tsp cumin, 2tsp turmeric, 2tsp coriander, and 2tsp paprika. then add in the cooled-down frying mixture (the onions, garlic and mushrooms) as well as 1 cup of chickpea flour and 1/2 cup of the aquafaba. Continue to mash together until burger patties are able to be formed.


Place on a non-stick baking tray with a little oil. Place in preheated oven for 30 minutes, flipping halfway through. Once cooked construct your burger with a brioche burger bun, condiment of choice, lettuce, tomato, and pickles. Of course, you can construct your burger how you wish but this is how I would stack it up! Enjoy.
